Great Don, but what does all that mean?
Xocai’s patented “cold pressing” process allows the decadent nutrients and anti-oxidants to remain UNDAMAGED.
The way that cocoa is normally processed is through something called the “Dutching” process. It is done to make the chocolate have a nice mild taste. It includes roasting, alkalization (make it less acidic) and fermenting of the beans.
When that happens, you lose most of the anti-oxidant content of the cocoa and all the benefits associated with it.
So if you stumble upon a chocolate that claims a high cocoa content (let’s say 70% and higher) can you really say that it is healthy? It still contains processed cocoa and the anti-oxidant benefits that were once there in the un-adultered form are now gone.
Xocai doesn’t do any of those things and the best part is that it tastes great.
